What's Actually in Your Beer? A Friendly Guide to Malt, Hops & Yeast
Pick up almost any craft beer and you'll be greeted with a list of tasting notes. Juicy. Tropical. Citrusy. Piney. Chocolatey. Biscuity. Maybe even "dangerously drinkable" if the brewer is feeling particularly confident.
Alongside those descriptions you'll usually find a list of ingredients: water, malted barley, hops and yeast.
Most of us know roughly what those words mean, but very few of us know what each ingredient actually contributes to the beer in our glass. Hops often steal the spotlight, malt quietly works in the background, yeast barely gets mentioned at all, and water somehow manages to be both the most obvious ingredient and the easiest to forget.
The truth is that every pint is the result of these ingredients working together. Take one away and you don't have beer anymore.
So we thought we'd pull back the curtain a little. No brewing degree required. No chemistry exam at the end. Just a straightforward guide to the three ingredients that give beer its flavour, colour, aroma and character.
It All Starts With Malt

If hops are the personality of a beer, malt is its foundation.
Before a brewer even thinks about yeast or hops, they need sugar. Yeast can't create alcohol from nothing, so those sugars have to come from somewhere.

Malt is usually barley that has been soaked in water, allowed to begin germinating, and then dried with heat before it grows into a plant. This process unlocks natural enzymes inside the grain, making the starches available to be converted into fermentable sugars during brewing.
Without malt, there is no sugar.
Without sugar, there is no fermentation.
Without fermentation...
...you're basically drinking sweet cereal tea.
Thankfully, malt does far more than simply provide fuel for the yeast.
It also determines much of a beer's colour, body, mouthfeel and flavour. The difference between a crisp golden lager, a rich amber ale and an inky black stout often has far more to do with the malt than the hops.
Once you start paying attention to malt, you'll notice it everywhere.
Base Malts – The Backbone of Beer
Think of base malt as the foundations of a house.
It usually makes up the overwhelming majority of the grain bill and provides most of the sugars needed for fermentation.
Because base malts are gently kilned, they remain relatively pale in colour and produce clean, subtle flavours like fresh bread, biscuits, crackers and gentle sweetness.
Different base malts create surprisingly different beers.
A Pilsner malt produces delicate, crisp lagers.
A Pale Ale malt brings slightly richer biscuit notes.
Vienna malt introduces gentle toastiness and a warm golden colour.
Munich malt pushes things further into bread crusts and richer malt sweetness.
Before a brewer has even reached for the hops, they've already decided a huge amount about how that beer is going to feel.
Specialty Malts – Where the Magic Happens
If base malt builds the house, specialty malts decorate it.
They're used in much smaller quantities but have an enormous impact on flavour.
Specialty malts can contribute:
The reason is surprisingly simple.
The longer a malt is kilned or roasted, the darker it becomes and the more its flavour develops. It's rather like toast. Lightly toasted bread tastes sweet and soft. Leave it another couple of minutes and suddenly you're tasting caramelisation. Leave it much longer and you've entered charcoal territory. Brewers use exactly this spectrum.
Crystal malts create caramel sweetness. Chocolate malts create cocoa and roast. Black malts create coffee-like bitterness and deep colour. No coffee beans required.
It's Not Just Barley
Although barley is the backbone of brewing, it isn't the only grain that gets invited to the party.
Many beers also contain wheat, oats or rye. Each changes the beer in different ways.
Wheat contributes a soft bready character while also helping create the thick creamy foam many people associate with wheat beers.
Oats are responsible for the silky mouthfeel found in many modern hazy IPAs and stouts.
Rye introduces gentle spice and a slightly drier finish.
These grains rarely shout for attention individually, but together they shape how a beer feels as much as how it tastes. That soft pillowy body in your favourite hazy pale? There's a good chance the oats deserve some of the credit.
Then Come the Hops

If malt builds the beer, hops shape its personality.
The first is balancing sweetness. The second is delivering flavour and aroma.
For centuries, hops were valued primarily because they stopped beer tasting overwhelmingly sweet. Remember all those sugars malt provides? Not every one of them gets fermented. Some remain in the finished beer, giving it body and sweetness. Without bitterness to balance that sweetness, beer would become cloying very quickly.
Hops provide that balance.
The Science Bit (Without Feeling Like School)
Inside every hop cone are compounds called alpha acids. On their own they don't contribute much bitterness. The magic happens when they meet boiling wort.
Heat transforms those alpha acids into iso-alpha acids, which dissolve into the beer and create the bitterness we associate with many beer styles.
This is why brewers carefully time when hops are added.
Add hops early in the boil and they spend plenty of time extracting bitterness. Add them near the end and far less bitterness develops.
It's one of the brewer's simplest but most powerful tools.

Why Some Beers Smell Like Tropical Fruit
Here's where modern brewing gets really interesting. Hops don't just create bitterness. They're packed with incredibly aromatic oils. These oils produce many of the flavours people now associate with craft beer:
The catch? These oils are incredibly delicate:
Boil them for too long and they simply disappear. That's why many brewers add hops right at the end of the boil or even after boiling has finished.
Some skip the boil altogether and add hops directly into the fermenter once the beer has cooled. This technique is called dry hopping. Dry hopping adds huge aroma without dramatically increasing bitterness. It's why you can smell some hazy IPAs from across the room before you've even lifted the glass.
Not All Hops Are the Same
Just as different grape varieties produce different wines, every hop variety has its own personality.
Some are bred almost entirely for bitterness. Others are bursting with citrus and tropical fruit. Some offer floral elegance. Others bring pine forests, herbs or earthy spice.
Traditional European "noble" hops tend to be subtle, floral and spicy, making them ideal for lagers and classic continental styles. Modern American, Australian and New Zealand varieties often lean heavily into tropical fruit, citrus and resin, helping define the juicy IPAs that dominate craft beer today.
Neither approach is better. They're simply different tools for different jobs. One brewer might want a clean, crisp pilsner. Another wants something that smells like someone blended a fruit salad into a pine forest.
Thankfully, hops can do both.
Understanding Bitterness
Beer enthusiasts often talk about IBUs, or International Bitterness Units. It sounds technical, but it's really just a rough measurement of how bitter a beer is.
A beer with 20 IBUs will generally taste much softer than one with 80.
But bitterness isn't everything.
A beer with a high malt sweetness can balance high bitterness beautifully. Likewise, a low-bitterness pale ale can feel wonderfully refreshing. It's less about chasing numbers and more about achieving balance.
A great beer isn't necessarily the bitterest. It's the one where every ingredient plays its part.
Yeast – The Ingredient That Actually Makes Beer

If malt provides the sugar and hops provide the flavour and balance, there's one ingredient left to introduce. It's also the hardest-working ingredient in the brewery.
Yeast.
It's funny really. We happily describe beers as "hoppy" or "malty", but almost nobody says a beer is "yeasty", despite the fact that without yeast there simply wouldn't be beer at all.
Before fermentation, what brewers have is something called wort — essentially a warm, sweet liquid made from malted grain. It smells promising, but it's still miles away from becoming beer.
Then the yeast arrives.
Yeast is a single-celled fungus that consumes the sugars released from the malt. As it feeds, it produces two things every brewer wants: alcohol and carbon dioxide. The alcohol is obvious enough, while much of the beer's natural carbonation is created during this same process.
In other words, yeast is the ingredient that brings the whole thing to life.
But that's only half the story.
Yeast Does Far More Than Make Alcohol
Many people assume yeast's only purpose is producing alcohol. In reality, it's also responsible for a remarkable amount of the flavour and aroma we associate with different beer styles.
As yeast ferments, it naturally creates hundreds of tiny flavour compounds. Brewers often talk about esters and phenols, but you don't need to remember the scientific names to recognise them.
Those fruity banana notes in a German wheat beer? That's yeast. The gentle clove spice that follows? Also yeast. Hints of pear, apple, bubble-gum or even subtle pepper? Again, yeast quietly doing what it does best.
The brewer chooses a yeast strain not simply because it produces alcohol, but because it helps shape the personality of the finished beer.
You could brew exactly the same recipe twice using two different yeasts and end up with beers that taste surprisingly different.
That's how important it is.
Ale or Lager? It Mostly Comes Down to Yeast
One of the first questions people ask when they get into beer is: "What's actually the difference between an ale and a lager?"
Many assume it's the colour. Others think it's the strength. Some believe lager simply means beer served cold. The real answer is much simpler.
It's the yeast.
Almost every beer in the world belongs to one of two families.
Ale yeasts prefer warmer fermentation temperatures, typically somewhere between 18°C and 22°C. Working in these warmer conditions encourages those fruity esters and complex aromas we mentioned earlier, giving ales their expressive personalities.
Lager yeasts, on the other hand, enjoy working much colder, usually between 8°C and 13°C. Fermenting more slowly suppresses many of those fruity compounds, producing the clean, crisp, refreshing character people associate with traditional lagers.
Neither approach is better. They're simply different styles with different goals. Think of it like photography. One brewer wants bold colours and dramatic lighting. Another wants clean lines and perfect clarity. Both can create something beautiful.
The Tiny Organism With a Remarkable History
One of our favourite brewing facts is that scientists only discovered the mysterious second parent of modern lager yeast in 2011.
For centuries, brewers had been happily making lagers without fully understanding where the yeast had come from.
It turns out one half of modern lager yeast is a wild species that was eventually discovered growing on beech trees in Patagonia.
Somehow, centuries ago, this cold-loving wild yeast met traditional brewing yeast in Europe. Together they formed the hybrid strain now responsible for producing the vast majority of the lager enjoyed across the world.
Every crisp pint carries a tiny piece of that extraordinary journey. Not bad for something invisible to the naked eye.
Wild Yeast – Brewing Before Brewing Knew What Brewing Was
Long before microscopes existed, people were brewing beer. Nobody knew yeast existed. They simply noticed that if grain and water were left in the right conditions, something magical happened. Nature handled the rest.
Some breweries still work this way today.
Traditional Belgian lambics are fermented using wild yeasts and bacteria floating naturally through the air, rather than carefully cultivated brewing strains.
The result is something completely different.
These beers can be tart, funky, earthy and wonderfully unpredictable. Some develop flavours people compare to leather, hay, tropical fruit or even farmyards. They aren't for everyone, but they remind us that brewing has always balanced science with a little bit of mystery.
So How Do These Ingredients Work Together?
By now we've looked at each ingredient individually. The clever part is what happens when they work together.
Imagine building a band.
Malt is the rhythm section. It provides structure, body and depth. It keeps everything grounded.
Hops are the lead guitar. Sometimes loud and showy. Sometimes delicate and restrained. But always helping define the beer's personality.
Yeast is the vocalist. It ties everything together and ultimately determines how the whole performance feels. Each ingredient is important on its own.
Together, they become something much greater.
That's why brewing isn't simply following a recipe. It's balancing dozens of small decisions. A slightly different malt changes the sweetness. A different hop changes the aroma. A different yeast changes the entire character of the beer. The smallest tweaks can produce dramatically different results.
What This Means for Us
Here in Dunblane, every beer begins with those three conversations.
What do we want the malt to contribute? Which hops best suit the style? What kind of yeast will bring the whole thing together?
Sometimes we're aiming for something bright, juicy and tropical. Sometimes we want rich roasted malt to take centre stage. Other times we're chasing big flavour in a beer that's only 3% ABV or even alcohol free.
That last challenge is one we particularly enjoy. People often assume lower-strength beers must automatically taste of less. Thankfully, brewing doesn't work like that.
Alcohol certainly contributes body and warmth, but so do carefully chosen malts, expressive yeasts and modern aroma hops.

Every recipe is about finding balance rather than simply chasing strength.

Tasting Beer a Little Differently
The next time you pour yourself a beer, slow down for thirty seconds before taking the first sip.
Look at the colour. That tells you something about the malt. Hold the glass under your nose. Those aromas are largely coming from the hops and, in some styles, the yeast. Now take a sip. Notice whether the beer feels light or full. Creamy or crisp. Sweet or dry. Think about where the bitterness appears. Does it arrive immediately, or only after you've swallowed? As you pay attention, you'll begin noticing that every beer tells a slightly different story. Once you begin spotting these little differences, you can't really switch that part of your brain off again.
We're sorry about that.
Beer Is More Than the Sum of Its Parts
It's easy to think of brewing as mixing four ingredients together and hoping for the best.
The reality is far more interesting. Brewers spend years learning how tiny changes affect the finished pint. A slightly different roasting temperature for the malt. A different hop variety added five minutes later. A yeast fermented one degree warmer. Each decision nudges the beer in a different direction. That's what makes brewing endlessly fascinating.
There isn't one perfect recipe. There are simply thousands of possibilities waiting to be explored.
Come Taste the Difference
Reading about beer is one thing. Drinking it is considerably more enjoyable.
The best way to understand the ingredients we've talked about is to taste beers side by side. Compare a crisp lager with a hazy IPA. Try a pale ale next to a stout.
See if you can spot the gentle biscuit notes from the malt, the bright citrus from the hops, or the fruity character contributed by the yeast.
Once you know what you're looking for, those flavours become much easier to find.
